1. The Tea Garden is located in the birthplace of Japanese matcha:
Our tea garden is situated in Yuhang District, Hangzhou, the very origin of Japanese matcha. The climate here closely resembles Japan's oceanic and temperate climate, making it more suitable for matcha production compared to other regions in China.
The particle size of matcha falls within a range, typically spanning from around 100 to over 6000 mesh. This range can be accurately measured using dry laser particle size analyzers, and test reports can be provided to verify the results.
The national standard for matcha explicitly requires that 60% of the particles pass through an 800-mesh sieve, rather than mandating that 100% achieve a specific mesh size.
Some competitors online claim their matcha is 6000 mesh, but this actually means that only a few percent of the particles can reach as fine as 6000 mesh, while over 90% fail to meet this standard.
The final step in matcha production involves ultrasonic sieving with a sieve pore diameter of 80 mesh. The reason for choosing 80 mesh is that only this pore size allows for efficient large-scale sieving of matcha. Therefore, reputable companies in the industry often specify "100% passing through 80 mesh" on their product certificates.
4. Why is the total bacterial count usually in the thousands?
Even matcha produced in a GMP-certified 100,000-class purification workshop still has a total bacterial count in the thousands. This is not unique to matcha-other food ingredients also exhibit similar bacterial counts unless they undergo radiation sterilization. Currently, there are no national requirements for total bacterial count in matcha intended for export or domestic sales in China.
The generally accepted total bacterial count for matcha is around 3,000-5,000. Leading companies in the industry often indicate on their product certificates that the total bacterial count is less than 10,000.
5. Nutritional Value of Matcha Powder
Matcha is a superfine powder produced through deep processing of tea leaves, combining the benefits of both drinking and eating tea. As a result, its nutritional and health value is higher than that of traditional tea. By shifting from "drinking tea" to "eating tea," matcha retains 100% of the nutrients and pharmacological components of green tea while fully utilizing dietary fiber, active polysaccharides, and other beneficial substances.
Matcha powder preserves more than 500 components found in tea leaves, including the five major nutrients: protein, fat, carbohydrates, vitamins, and minerals. It is rich in essential nutrients and trace elements, with key components such as tea polyphenols, free amino acids, chlorophyll, protein, aromatic compounds, cellulose, vitamins (C, A, B1, B2, B3, B5, B6, E, K, H), and nearly 30 trace elements including potassium, calcium, magnesium, iron, sodium, zinc, selenium, and fluoride.
